INGREDIENTS

1.75 cups water

1 cup quinoa

1/4 cup sliced almonds toasted

2 tablespoons lime juice fresh

2 teaspoons olive oil

1.5 teaspoons sesame oil

pinch kosher salt

3 green onions sliced thin

12 ounces soft tofu

INSTRUCTIONS

Bring water and quinoa to a boil

Bring water and quinoa to a boil. Reduce heat and let simmer for 10-15 minutes or until cooked.

Drain quinoa.

Stir in almonds, juice, sesame oil, salt, and onions.

Sautee tofu in olive oil. Top over quinoa mix.
